5 dried kombu leaves (seaweed)
2 litres of water
6 tablespoons shiro miso
3 green onions, thinly sliced
4 cloves garlic
1 ½ carrots
175 grams shiitake or mushrooms
4 teaspoons low-salt soy sauce , optional
Soak the kombu in water for about 10 minutes.prepare two litres of water and put the miso shiro paste in a pot and bring to a slow boil. Meanwhile, finely chop the vegetables and add them to the pot. Press the garlic cloves into the pot. Next, remove the kombu from the water, cut it into small pieces and add it to the soup. Simmer the soup for about 30 minutes on low heat. If desired, serve in a nice soup bowl with a teaspoon of soy sauce.
